Gothic you mostly kill animals that attack you anyways, except for some farm animals in Gothic 3.
I do not know about you but I killed all animals I could, including those that did not attack me (meatbugs, hares, snakes, lizards, buffalos and even deer that dared to come too close to my mighty blessed and sharpened Krush Tarach). This netted XP as wel as meat (i.e. restored hit points).

Those were in Gothic III. In G I & II you only had meat bugs on the "inoffensive" animal/insect list.
